Edible wood consists of tree trunks inoculated with edible mushrooms such as oyster mushrooms and shiitake, and this year even with truffle. The logs can be stood upright in a shady spot in the garden, preferably somewhat in view to be able to follow the often rapid development of the mushrooms. Oyster mushrooms and shiitake mushrooms use the wood as a nutrient medium and after each ‘flush’ the wood is a little lighter. Many meals and a few years later, the wood is so decomposed that it falls apart. The leftover ‘edible wood’ can be used in the garden as compost, a rich addition to the soil…! Truly a wonderful cycle, in the form of a tree trunk…. and the result is tasty and healthy!

In September 2026, Pip is bringing logs inoculated with velvet shank mushrooms. You simply must go and see it!
Velvet shanks love the cold. A few days after a very cold night, the fragile-looking velvet shank mushrooms appear in velutinous orange. Many small portions spread out over a single season bring a dish to life. Particularly as a garnish, the gourmet can enjoy the crunchiness and slightly fruity taste. The best place for a velvet shank log is lying on the ground in the shade out of the wind.
