In older days, every estate and abbey had a vegetable cellar. The autumn vegetables ripened in the garden are replanted in the prepared beds in the cellar : cardoon (which need to become white before eating), celery, turnips, carrots, vipers grass, red and white cabbages, endives and dandelions can be kept for months protected from frost and light.
